Easy Tuna Pilaf
Ingredients
- 1 Onion (chopped)
- 1 ¼ cups (250 gm) Basmati Rice
- 3 teaspoons chicken or vegetable stock powder
- 1 cup (130 gm) frozen baby peas
- 2 x 185 gm cans lemon-infused tuna
Directions
Step 1 – Bring 2 ½ cups (625 ml) water to boil in an electric kettle. Meanwhile heat 1 tablespoon of olive oil in a large heavy based saucepan. Add the chopped onion to the pan and cook over a medium-high heat for 3 minutes or until softened. Add the rice and stir to coat in the oil.
Step 2 – Stir the boiling water into the rice with the stock powder. Cover and bring to boil. Reduce the heat to medium-low and cook, tightly covered, for 7 minutes. Uncover very briefly, scatter the peas on top, then cover and cook for a further 5 minutes. Turn off the heat and allow the rice to stand for 5 minutes.
Step 3 – Meanwhile, drain and flake the tuna. Remove the pan from the heat and gently fold the peas and tuna through. Serve immediately.
