Healthy Cooking

As part of our aim to encourage healthy eating and lifestyle choices, we bring you this easy to cook, healthy and delicious Lime and Coriander Chicken Strips recipe.

This makes a great summer lunch or light dinner. Give it a try and let us know what you think. Happy cooking!

Lime and Coriander Chicken Strips

Ingredients (Serves 4)

  • 1 lime
  • 2 tablespoons chopped fresh coriander
  • 2 cloves garlic
  • 1 red Birdseye (Thai) chilli
  • 16 chicken tenderloins (tenders)


Step: 1 – Finely grate the zest of the lime, then juice the lime. Put 1 teaspoon lime zest and 2 tablespoons juice in a bowl with the coriander and 2 tablespoons peanut oil.

Step: 2 – Crush the garlic and finely chop the chilli; add to the bowl along with the chicken. Season with salt and freshly ground black pepper and mix well.

Step: 3 – Heat a non-stick frying pan over medium-high heat. Add half the chicken and fry for 3 minutes on each side or until cooked and golden brown. Transfer to a plate and cover loosely with foil to keep warm while cooking the remaining chicken. Serve hot.

*Suggestion: Serve with cooked rice and your choice of steamed greens.
